ボーヌで醸造学を学んでいる最中で、カリフォルニアのマム‧ナパ、ペルノ‧リ カールでの修⾏から戻ったばかりだったが、祖⽗にアルザスに戻るよう頼まれ、 ブドウ畑を有機栽培に変えることを条件として家業に⼊った。シャルルの最初の 収穫は2010年であるが、この年に8.2haのブドウ畑を持つDo maine BuecherFixを経営していた現在の妻、アメリ‧ブシェールと出会う。2017年にエコサー トとデメターからそれぞれオーガニックとビオディナミの認定を受け、それを機 に夫妻は2つのドメーヌを統合し、およそ20haを所有するアメリー\u0026amp;シャルル‧ スパーを創業した。 シャルルは、話し出すと⽌まらないワイン造りへの飽くなき探求⼼とセンスの みならず、⼤胆な⾏動⼒を持つ⼈物であり、そのエピソードには事⽋かない。な んと、裁判所での特別な⼿続きを経て、わずか16歳で25年間を掛けて返済する必 要がある多額の借⾦をして珠⽟のグラン‧クリュScho enenbo urgを獲得してい る。また所有するグラン‧クリュのひとつであるMambo urgはアルザスでも⼀ 番暖かく、⽩ブドウにとっては糖度が上がりすぎてしまうため、ピノ‧ノワール とシラーのみを植えている。グラン‧クリュとは名乗れなくなってしまうことな ど意にも介さない彼のこだわりが良くわかる。残糖がなく酸がしっかりとしたク リーンな味わいのワインをナチュラルな造りで⽣み出すアルザス屈指の注⽬⽣産 者である彼らは、数ある⽣産者団体には⼀切加盟せず、⾃らの意思のみを指針に 豊富な経験を活かしたワイン造りに邁進している。 所有畑20haのうち、80%もの⼤部分がロケーションの良い丘陵地にあり、所 有畑の半分に及ぶ10haがグラン‧クリュの畑だ。しかも、フラッグシップの Scho enenbo urgを筆頭にHengst、Brand、Mambo urgなどの著名畑を所有 している。2010年からオーガニック、2014年からはビオディナミ栽培を採⽤し、 上述した通り2017年にオーガニックとビオディナミの認証を取得した。畑は草を ⾃⽣させていて、1年に3回、⾺で耕作をし、伝統的な⼿作業で収穫をしている。 すべて⾃然酵⺟で発酵させ、ワインはきめ細かい澱の上で12〜18ヶ⽉間熟成させ る。ピノ‧ノワールに関しては例外的な年を除き、100%全房発酵させる。 既に評論家たちからの熱い視線が注がれており、Vino usは、「アルザス地⽅に 誕⽣した最も野⼼的な新しいワイナリーのひとつによって作られたワインは確か
